Espresso Surprise Cookies.

So this is my first attempt at blogging! I love baking, and inventing recipes in my head as I go, and I wanted to share some of the things I have made!

These cookies started out as a basic chocolate chip cookie, when (oh no!) I realised I had no chocolate chips. Of course I probably should have checked before getting started, but oh well. After a few minutes of fruitless searching, I stumbled across a couple jars of instant coffee! So I mixed it with some water (big mistake!) and added it to the bowl. Unfortunatley, it turned into a sticky mess. I tossed in some more flour, and voila! The dough tasted great. I just wasn't sold on a plain coffee cookie, it just seemed too boring. I rummaged through my cabinets some more, when it hit me. Marshmallows!

15 minutes later, I saw that the marshmallow was oozing out of the cookie a little bit, and it looked so good, I just had to eat one...or two. I'll work it off in the morning. Anyways, these cookies are so good, I'm definitely making them again. I think they may have replaced chocolate chip as my favourite cookie!

Espresso Surprise Cookies.

1/2 cup butter, soft.
1/2 cup brown sugar
1/4 cup white sugar
1 egg
1 1/2 tsp vanilla
1 cup flour
1/2 tsp baking soda
1/2 tsp salt
a couple of tsp instant coffee powder to taste
miniature marshmallows


Like any cookie, cream the butter and sugar together. Add the egg, and mix in. Pour in the vanilla. Stir. Sift in the flour, salt, and soda. Shake in the instant coffee, stirring after each tsp.
Roll about a tsp of dough in your hand, and squish flat. Place about 4 mini marshmallows in the middle, and roll around them. Making sure they are all covered. Place on an ungreased baking sheet (use baking paper if your worried about the gooey marshmallows!) and sprinkle with more instant coffee powder (I also tried cocoa powder for variety). Bake at 350 degrees for 12 minutes (or until your finger doesn't dent. They are already quite brown, so the colour didn't change much for me!) Cool and enjoy!
